This recipe celebrates Red Chilli Powder not just for heat, but as the soul of the marinade, giving the paneer its iconic fiery colour and bold flavour. It’s an irresistible starter or snack for festive evenings, especially perfect for Diwali get-togethers.
250 g paneer, cut into 1.5-inch cubes
1 small capsicum, cut into 1-inch pieces
1 small onion, cut into petals
3 tbsp thick curd (hung yogurt works best)
1.5 tsp RHB’s Desi Zaika Red Chilli Powder (adjust as needed for spice level)
1 tsp RHB’s Desi Zaika Turmeric Powder
1 tsp amchur (dry mango powder)
1 tsp ginger-garlic paste
1 tbsp lemon juice
Salt to taste
1.5 tbsp oil (for marinade) + 2 tbsp oil (for grilling or pan-frying)
2 tbsp chopped fresh coriander leaves
Heat 2 tbsp oil in a wide non-stick pan over medium heat. Arrange the marinated paneer and vegetables evenly. Cook for 10-12 minutes, turning occasionally, until the paneer is golden on all sides and the vegetables are slightly charred but still crunchy.
Our Secret: For a richer taste, you can add 1 tablespoon of crushed roasted peanuts to the stuffing mixture for a lovely crunch.
